Ingredients
Scale
Cookie Dough
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Filling
- 1/2 cup Nutella
Topping
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
Instructions
- Preheat and prepare the skillet: Preheat your oven to 350°F (175°C). Grease a 10-inch oven-safe skillet thoroughly with non-stick spray or butter to prevent sticking.
- Cream butter and sugar: In a large mixing bowl, cream together the softened butter and packed brown sugar until the mixture is light and fluffy, about 2-3 minutes. Then add the egg and mix until fully incorporated, creating a smooth base for your dough.
- Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt to evenly distribute the leavening and spices.
- Combine ingredients to form dough: Gradually add the dry ingredients into the wet ingredients, stirring or mixing until just combined into a soft dough. Avoid overmixing to maintain tenderness.
- Form the cookie base: Divide the dough into two equal halves. Press half of the dough evenly onto the bottom of the greased skillet, creating a uniform crust layer.
- Fill with Nutella: Spoon dollops of Nutella in the center of the dough layer, spreading it out slightly but keeping it away from the edges to prevent leaking during baking.
- Cover with remaining dough: Take the remaining half of the dough and gently press it over the Nutella to completely encase the filling, sealing the edges as best as you can.
- Add churro topping: Combine the granulated sugar and cinnamon in a small bowl. Sprinkle this cinnamon-sugar mixture generously over the top of the cookie dough crust for that signature churro flavor and crunchy texture.
- Bake: Place the skillet in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set but still soft. The Nutella inside should be wonderfully gooey and melty.
- Cool and serve: Allow the skillet cookie to cool slightly in the pan to help firm up a bit before slicing. Serve warm and enjoy the delicious mix of warm cookie and melted Nutella.
Notes
- Be sure to use an oven-safe skillet to avoid accidents in the oven.
- You can substitute Nutella with any other chocolate hazelnut spread or even peanut butter for variation.
- For an even richer crust, chill the dough for 15-20 minutes before assembling.
- The cookie is best served warm to enjoy the gooey Nutella center.
- Leftovers can be reheated gently in the microwave for 10-15 seconds.
