Description

No-Bake Strawberry Cheesecake Lasagna is a luscious layered dessert featuring a crunchy graham cracker crust, a smooth and creamy sweetened cream cheese layer, and a fresh strawberry gelatin topping. This easy-to-make treat requires no baking and is perfect for summer or any occasion when you want a refreshing, fruity, and creamy dessert that sets beautifully in the refrigerator.

Ingredients

Scale

Crust Layer:

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted

Cream Cheese Layer:

  • 1 (8 oz) package cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8 oz) container whipped topping (like Cool Whip)

Strawberry Layer:

  • 2 cups fresh strawberries, hulled and sliced
  • 1 (3 oz) box strawberry gelatin (Jell-O)
  • ½ cup boiling water
  • ½ cup cold water

Topping:

  • 1 cup whipped topping
  • Extra strawberries and graham crumbs for garnish (optional)

Instructions

  1. Prepare the crust: In a bowl, combine graham cracker crumbs and melted butter until evenly mixed. Press the mixture firmly into the bottom of a 9×13-inch dish. Refrigerate for 10–15 minutes to allow the crust to firm up.
  2. Make the cream cheese layer: In a separate bowl, beat softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, mixing until well combined. Gently fold in the whipped topping until the mixture is light and fluffy. Spread this cream cheese mixture evenly over the chilled graham cracker crust. Return to the refrigerator to keep chilled.
  3. Prepare the strawberry gelatin layer: In another bowl, dissolve the strawberry gelatin powder in ½ cup boiling water, stirring until fully dissolved. Add ½ cup cold water and mix well. Let the gelatin mixture cool to room temperature, but do not allow it to set. Stir in the sliced fresh strawberries gently.
  4. Assemble the layers: Carefully pour the gelatin and strawberry mixture over the cream cheese layer, spreading evenly. Place the dish back into the refrigerator and chill for at least 4 hours, or until the gelatin layer is fully set.
  5. Add the topping and garnish: Before serving, spread the remaining 1 cup of whipped topping evenly over the set strawberry gelatin layer. Garnish with extra fresh strawberries and a sprinkle of graham cracker crumbs if desired.
  6. Serve: Slice into squares and serve chilled for a refreshing and creamy no-bake dessert experience.

Notes

  • You can substitute strawberry pie filling for the gelatin layer for a quicker alternative.
  • Best served within 2 days to maintain freshness and texture.
