Ingredients
Scale
Main Ingredients
- 3/4 cup peanut butter
- 1/4 cup unsalted butter, cut into pieces
- 2 cups chocolate chips (milk or semi-sweet)
- 1 1/2 cups Rice Krispies
- 3 cups mini marshmallows
Instructions
- Prepare the Pan: Line an 8×8 or 9×9 inch square pan with parchment paper or aluminum foil, and lightly spray with non-stick cooking spray to ensure the squares can be removed easily once set.
- Melt Ingredients: In a large microwave-safe bowl, combine the peanut butter, unsalted butter, and chocolate chips. Microwave on medium power in 45-second intervals, stirring well between each, until the mixture is completely melted and smooth.
- Cool Slightly: Stir the melted mixture continuously until fully combined and let it cool slightly for about 5 minutes to avoid melting the marshmallows when added.
- Combine: Gently fold in the Rice Krispies and mini marshmallows, ensuring they are evenly coated with the chocolate mixture without crushing the marshmallows.
- Set the Squares: Pour the combined mixture into the prepared pan and spread it out evenly. Place the pan in the refrigerator and chill for at least 3 hours or until the mixture is firm and set.
- Serve: Once set, lift the bars out of the pan using the parchment paper or foil overhang, cut into squares, and serve immediately or store in an airtight container.
Notes
- For a crunchy texture, do not overmix the Rice Krispies and marshmallows.
- You can use either milk or semi-sweet chocolate chips based on your preference.
- Store the squares in the refrigerator to keep them firm; they can also be frozen for longer storage.
- Feel free to add nuts or dried fruits for extra flavor and texture.
- If peanut butter is a concern, sunflower seed butter can be a substitute to make it nut-free.
