- 1 cup creamy peanut butter
- 1/2 cup honey or maple syrup
- 1/2 cup coconut oil
- 3 cups quick oats
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium saucepan over medium heat, combine peanut butter, honey (or maple syrup), and coconut oil. Stir until melted and well combined.
- Remove from heat and stir in vanilla extract and salt.
- Gradually mix in the oats until fully coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet and flatten slightly with the back of a spoon.
- Refrigerate for at least 30 minutes or until firm.
- Store in an airtight container in the refrigerator.
Notes
- You can substitute almond butter or sunflower seed butter for peanut butter.
- Use gluten-free oats to make this recipe gluten-free.
