No Bake Berry Lush is a refreshing layered dessert made with a graham cracker crust, creamy cheesecake layer, berry gelatin, and whipped topping. It’s easy to prepare and perfect for summer gatherings.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 8 oz whipped topping (like Cool Whip), divided
- 1 package (3 oz) strawberry or raspberry flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1/2 tsp vanilla extract
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a 9×13 inch dish to form a crust. Chill in the refrigerator for 15 minutes.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Fold in half of the whipped topping.
- Spread the cream cheese mixture evenly over the chilled crust.
- In another bowl, dissolve the gelatin in 1 cup boiling water. Stir in 1 cup cold water and let it cool slightly.
- Arrange the mixed berries evenly over the cream cheese layer.
- Pour the cooled gelatin over the berries. Refrigerate until the gelatin is set, about 2-3 hours.
- Spread the remaining whipped topping over the set gelatin layer.
- Chill for at least 1 more hour before serving. Slice and enjoy!
Notes
- You can use any combination of berries depending on your preference or availability.
- For a lighter version, use low-fat cream cheese and whipped topping.
- Make sure gelatin is not too hot when poured over berries to prevent wilting them.
