Description

No Bake Berry Lush is a refreshing layered dessert made with a graham cracker crust, creamy cheesecake layer, berry gelatin, and whipped topping. It’s easy to prepare and perfect for summer gatherings.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz whipped topping (like Cool Whip), divided
  • 1 package (3 oz) strawberry or raspberry flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/2 tsp vanilla extract

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a 9×13 inch dish to form a crust. Chill in the refrigerator for 15 minutes.
  2. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Fold in half of the whipped topping.
  3. Spread the cream cheese mixture evenly over the chilled crust.
  4. In another bowl, dissolve the gelatin in 1 cup boiling water. Stir in 1 cup cold water and let it cool slightly.
  5. Arrange the mixed berries evenly over the cream cheese layer.
  6. Pour the cooled gelatin over the berries. Refrigerate until the gelatin is set, about 2-3 hours.
  7. Spread the remaining whipped topping over the set gelatin layer.
  8. Chill for at least 1 more hour before serving. Slice and enjoy!

Notes

  • You can use any combination of berries depending on your preference or availability.
  • For a lighter version, use low-fat cream cheese and whipped topping.
  • Make sure gelatin is not too hot when poured over berries to prevent wilting them.
