- 4 boneless, skinless chicken breasts
- 1 cup French dressing
- 1 cup apricot preserves
- 1 packet dry onion soup mix
- Salt and pepper to taste
- 1 tablespoon olive oil (optional for searing)
Instructions
- Preheat the oven to 350°F (175°C).
- Season the chicken breasts with salt and pepper.
- (Optional) Heat olive oil in a skillet and sear the chicken breasts on both sides for 2–3 minutes.
- In a medium bowl, mix together the French dressing, apricot preserves, and onion soup mix.
- Place the chicken breasts in a baking dish and pour the sauce over them.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the sauce is bubbling.
- Serve hot over rice or with vegetables.
Notes
- You can substitute apricot preserves with peach or orange marmalade for a different flavor.
- Searing the chicken adds extra flavor but is optional.
- Best served with steamed rice or mashed potatoes to soak up the sauce.
