Description

Moon Pies are a classic Southern treat made with two soft cookies sandwiching a sweet marshmallow filling, all dipped in chocolate.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup marshmallow creme (fluff)
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, then mix in milk and vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture until a dough forms.
  6. Scoop tablespoon-sized balls onto the baking sheets and flatten slightly.
  7. Bake for 10-12 minutes, then let cool completely on wire racks.
  8. Spread marshmallow creme on the flat side of half the cookies and top with another cookie to create sandwiches.
  9. Melt chocolate chips with vegetable oil in a microwave or double boiler until smooth.
  10. Dip each sandwich in chocolate to coat and place on parchment paper.
  11. Refrigerate until the chocolate sets, about 30 minutes.

Notes

  • You can add a pinch of cinnamon to the cookie dough for extra flavor.
  • Store Moon Pies in an airtight container in the refrigerator for up to 5 days.
  • Try using dark chocolate or white chocolate for different variations.
