Description

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder

- 1/2 tsp salt
- 1 cup marshmallow creme (fluff)
- 2 cups semi-sweet chocolate chips
- 2 tbsp vegetable oil
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in milk and vanilla extract.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture until a dough forms.
- Scoop tablespoon-sized balls onto the baking sheets and flatten slightly.
- Bake for 10-12 minutes, then let cool completely on wire racks.
- Spread marshmallow creme on the flat side of half the cookies and top with another cookie to create sandwiches.
- Melt chocolate chips with vegetable oil in a microwave or double boiler until smooth.
- Dip each sandwich in chocolate to coat and place on parchment paper.
- Refrigerate until the chocolate sets, about 30 minutes.
Notes
- You can add a pinch of cinnamon to the cookie dough for extra flavor.
- Store Moon Pies in an airtight container in the refrigerator for up to 5 days.
- Try using dark chocolate or white chocolate for different variations.
