Description

Mini Monster Cookie Cheesecakes are a delightful fusion of creamy cheesecake and the colorful, crunchy goodness of monster cookies, all in a bite-sized treat perfect for parties or snacks.


Ingredients

  • 1 cup crushed graham crackers
  • 3 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/2 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&M’s
  • 1/4 cup quick oats
  • 12 cupcake liners

Instructions

  1. Preheat oven to 325°F (163°C) and line a muffin tin with 12 cupcake liners.
  2. In a bowl, combine crushed graham crackers and melted butter. Press mixture into the bottom of each liner to form a crust.
  3. In a large bowl, beat the cream cheese until smooth. Add granulated sugar and brown sugar and beat until combined.
  4. Add eggs one at a time, mixing well after each. Stir in sour cream and vanilla extract.
  5. Fold in mini chocolate chips, M&M’s, and quick oats.
  6. Divide batter evenly among the 12 liners on top of the crust.
  7. Bake for 20–22 minutes or until the centers are set.
  8. Cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.

Notes

  • For added texture, top with extra M&M’s or chocolate chips before baking.
  • Store leftovers in the refrigerator for up to 5 days.
  • These can also be frozen and thawed as needed.
