Description

Ingredients

  • 1 cup tomato juice (such as Clamato or V8)
  • 1/2 cup ketchup
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp hot sauce (such as Tapatío or Cholula)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomato
  • 1 avocado, diced
  • Salt and pepper to taste
  • Tortilla chips or saltine crackers, for serving

Instructions

  1. In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce. Stir well to mix.
  2. Add chopped onion, cilantro, cucumber, tomato, and shrimp. Toss to combine evenly.
  3. Gently fold in diced avocado and season with salt and pepper to taste.
  4. Chill the mixture in the refrigerator for at least 30 minutes before serving.
  5. Serve in individual cups or bowls with tortilla chips or crackers on the side.
