- 1 lb cooked shrimp, peeled and deveined
- 1 cup tomato juice (such as Clamato or V8)
- 1/2 cup ketchup
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp hot sauce (such as Tapatío or Cholula)
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- 1 avocado, diced
- Salt and pepper to taste
- Tortilla chips or saltine crackers, for serving
Instructions
- In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce. Stir well to mix.
- Add chopped onion, cilantro, cucumber, tomato, and shrimp. Toss to combine evenly.
- Gently fold in diced avocado and season with salt and pepper to taste.
- Chill the mixture in the refrigerator for at least 30 minutes before serving.
- Serve in individual cups or bowls with tortilla chips or crackers on the side.
Notes
- Use pre-cooked shrimp to save time, or cook raw shrimp and chill before using.
- Adjust the amount of hot sauce to your preferred spice level.
- Best served cold and fresh for optimal flavor.
