- 1 lb ground beef
- 2 tablespoons vegetable oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 medium potatoes, peeled and diced
- 1 large tomato, chopped
- 1/2 cup tomato sauce
- 1/2 cup beef broth
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium heat. Add chopped onion and garlic; sauté until translucent.
- Add ground beef and cook until browned. Drain excess fat if necessary.
- Stir in diced potatoes, chopped tomato, tomato sauce, and beef broth.
- Season with cumin, oregano, salt, and pepper. Mix well.
- Cover and simmer on low heat for 15-20 minutes until potatoes are tender.
- Add peas and carrots; continue cooking for another 5-7 minutes until vegetables are soft.
- Adjust seasoning if needed and serve hot.
Notes
- Serve with rice or warm tortillas.
- You can add raisins or olives for a sweet-savory twist.
- Ground turkey can be used as a lighter alternative.
