A zesty and colorful Mexican-style coleslaw made with fresh vegetables and a tangy lime dressing. Perfect as a side dish or taco topping.

- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1/2 red bell pepper, thinly sliced
- 1/2 cup chopped fresh cilantro
- 1/4 cup thinly sliced red onion
- 1 jalapeño, seeded and finely chopped
- 1/4 cup fresh lime juice
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine green cabbage, red cabbage, carrots, bell pepper, cilantro, red onion, and jalapeño.
- In a small bowl, whisk together lime juice, apple cider vinegar, olive oil, honey, cumin, salt, and pepper.
- Pour the dressing over the vegetables and toss well to coat evenly.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Toss again before serving. Serve chilled or at room temperature.
Notes
- For a spicier slaw, keep the jalapeño seeds.
- This slaw can be made a day in advance and stored in the fridge.
- Great as a topping for tacos, burgers, or grilled meats.
