Description

Mashed Potato Cups are a fun and delicious twist on classic mashed potatoes, baked in muffin tins with a crispy top and creamy inside, perfect for individual servings.


Ingredients

  • 4 cups mashed potatoes (prepared and cooled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons chopped chives (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin with non-stick cooking spray.
  2. In a large bowl, mix the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, chives, salt, and pepper until well combined.
  3. Spoon the mixture into the prepared muffin tin, filling each cup to the top and smoothing the surface.
  4. Bake for 25-30 minutes or until the tops are golden brown and the cups are set.
  5. Allow to cool in the pan for 5 minutes before removing. Serve warm.

Notes

  • Use leftover mashed potatoes to save time.
