Description

These Marinated Grilled Mushroom Skewers feature button mushrooms soaked in a flavorful marinade of olive oil, soy sauce, balsamic vinegar, garlic, and herbs, then grilled to perfection. Perfect as an appetizer or side dish, they combine savory, tangy, and smoky notes for a delicious vegetarian option.

Ingredients

Scale

Marinade

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Main Ingredient

  • 1 pound button mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, dried thyme, dried rosemary, smoked paprika, salt, and freshly ground black pepper until smooth and well combined.
  2. Marinate the Mushrooms: Place the cleaned and trimmed button mushrooms in the bowl with the marinade and toss until all mushrooms are evenly coated. Cover and refrigerate for at least 30 minutes, ideally 2 to 3 hours, to allow the flavors to meld.
  3. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning during grilling.
  4. Preheat the Grill: Heat your grill to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
  5. Assemble the Skewers: Thread the marinated mushrooms onto the skewers, spacing them slightly apart to allow even cooking and smoke penetration.
  6. Grill the Mushrooms: Place the mushroom skewers on the preheated grill and cook for 10 to 12 minutes, turning occasionally to achieve an even char and tender texture. Mushrooms should be juicy and slightly caramelized.
  7. Serve and Enjoy: Remove the skewers from the grill, garnish with freshly chopped parsley if desired, and serve warm as a tasty appetizer or side dish.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • For a vegan option, use maple syrup instead of honey in the marinade.
  • Button mushrooms work best for even grilling, but cremini or baby bella mushrooms can also be used.
  • To enhance smoke flavor, add soaked wood chips to the grill if available.
  • Can be served with a side of rice, salad, or as a protein-rich vegetarian main.
