Margarita Grilled Shrimp Skewers are zesty, citrus-marinated shrimp grilled to perfection on skewers, perfect for summer cookouts or a light dinner.

- 1 1/2 pounds large shrimp, peeled and deveined
- 1/4 cup fresh lime juice
- 1/4 cup tequila
- 2 tablespoons orange juice
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh cilantro
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lime wedges, for serving
- Wooden or metal skewers
Instructions
- In a medium bowl, whisk together lime juice, tequila, orange juice, olive oil, cilantro, garlic, chili powder, salt, and pepper.
- Add the shrimp to the marinade, toss to coat, and refrigerate for 30 minutes to 1 hour.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto the skewers.
- Grill shrimp skewers for 2-3 minutes per side, or until pink and cooked through.
- Remove from grill and serve with lime wedges.
Notes
- Do not over-marinate the shrimp as the citrus can start to ‘cook’ them.
- Pair well with rice, grilled veggies, or a light salad.
- For a spicier kick, add a pinch of cayenne pepper to the marinade.
