A savory and sweet breakfast sandwich made with flaky croissants, eggs, cheese, and a delicious maple mustard sauce. Perfect for a quick morning treat or brunch favorite.
Ingredients

- 2 croissants, halved
- 2 large eggs
- 2 slices of cheddar cheese
- 2 slices of cooked bacon or ham (optional)
- 1 tbsp butter
- 1 tbsp Dijon mustard
- 1 tbsp maple syrup
- Salt and pepper, to taste
Instructions
- In a small bowl, mix Dijon mustard and maple syrup to create the sauce. Set aside.
- In a skillet, melt butter over medium heat.
- Crack eggs into the skillet and cook to desired doneness. Season with salt and pepper.
- Slice croissants in half and lightly toast them.
- Spread maple mustard sauce on the cut sides of the croissants.
- Place a slice of cheese on the bottom half of each croissant.
- Top with cooked egg and bacon or ham if using.
- Place the top half of the croissant on each sandwich and serve warm.
Notes
- Use plant-based cheese and skip meat for a vegetarian version.
- Try adding arugula or spinach for a fresh touch.
- The sauce can be made in advance and stored in the fridge for up to a week.
