- 1 pound flank steak or sirloin, thinly sliced against the grain
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
- Sesame seeds, for garnish (optional)
Instructions
- In a bowl, toss sliced beef with cornstarch until evenly coated. Set aside.
- In a small bowl, whisk together maple syrup, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes if using. Set the sauce aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef in a single layer and cook for 2–3 minutes per side until browned and crisp. Work in batches if needed.
- Return all beef to the skillet. Pour in the maple ginger sauce and stir to coat.
- Cook for another 2–3 minutes, stirring frequently, until the sauce thickens and glazes the beef.
- Remove from heat and garnish with green onions and sesame seeds.
- Serve hot over steamed rice or noodles.
Notes
- For a vegetarian version, substitute beef with tofu or tempeh.
- Adjust maple syrup for sweetness or add more soy sauce for saltiness.
