  • 1/2 cup chopped walnuts (optional)
  • Maple Drizzle:
  • 1/2 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 12 teaspoons milk

Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In a large bowl, whisk melted butter with brown sugar and granulated sugar until smooth. Add eggs, Greek yogurt, and vanilla extract, mixing until combined.
  4. Combine dry and wet ingredients: Stir in the dry ingredients until just combined, then gently fold in the chopped apples and walnuts if using.
  5. Bake: Divide the batter evenly among the muffin cups. Bake for 20–22 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and drizzle: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. For the drizzle, whisk together powdered sugar, maple syrup, and enough milk to reach a drizzle-able consistency. Drizzle over cooled muffins before serving.
