- 3 tbsp sweet chilli sauce
- 2 tsp all-purpose soy sauce or tamari
- 2 limes, juiced
- 1 tbsp olive oil
- 1 tsp honey or maple syrup

- Sea salt flakes, to taste
- Freshly cracked black pepper, to taste

- 2 ripe mangoes, peeled and diced
- 1 avocado, peeled, pitted and diced
- ½ small red onion, finely sliced
- 1 small cucumber, halved lengthways, then sliced (unpeeled)
- 30 g coriander (cilantro) leaves, roughly chopped
- 40 g crushed peanuts
Instructions
- Make the dressing: In a small bowl, whisk together the sweet chilli sauce, all-purpose soy sauce or tamari, freshly squeezed lime juice, olive oil, honey or maple syrup, and freshly grated ginger until well combined. Season with sea salt flakes and freshly cracked black pepper to taste, ensuring the flavors are balanced.
- Assemble the salad: In a shallow serving bowl, carefully layer the diced mango, sliced cucumber, diced avocado, finely sliced red onion, and roughly chopped coriander leaves in that order to create a visually appealing presentation.
- Dress the salad and serve: Drizzle the prepared sweet chilli lime dressing evenly over the layered salad. Then sprinkle the crushed peanuts on top. Gently toss the salad just before serving to combine the flavors while maintaining the beautiful layered look.
