Description

This Luscious Red Velvet Raspberry Poke Cake combines the rich, moist flavors of red velvet cake with the sweet and tangy burst of raspberry gelatin and preserves. Topped with fluffy whipped topping, fresh raspberries, and optional white chocolate shavings, this dessert is perfect for holidays, Valentine’s Day, or any special occasion, offering a delightful combination of textures and flavors.

Ingredients

Scale

Cake

  • 1 box red velvet cake mix (plus ingredients listed on the box)

Gelatin Mixture

  • 1 (3 oz) box raspberry gelatin (Jell-O)
  • 1 cup boiling water
  • ½ cup cold water

Topping & Garnish

  • 1 cup raspberry preserves or seedless raspberry jam
  • 1 (8 oz) tub whipped topping (like Cool Whip)
  • ½ cup fresh raspberries (for garnish)
  • 2 tablespoons white chocolate shavings (optional)

Instructions

  1. Prepare and Bake the Cake: Preheat the oven and prepare the red velvet cake mix according to the package directions. Pour the batter into a greased 9×13-inch pan and bake until a toothpick inserted in the center comes out clean. Allow the cake to cool for 10 minutes.
  2. Poke the Cake Holes: Using the handle of a wooden spoon, poke holes all over the cake about 1 inch apart. This allows the gelatin mixture to soak into the cake for added flavor and moisture.
  3. Make and Add the Gelatin: In a bowl, dissolve the raspberry gelatin in boiling water, stirring until completely dissolved. Add cold water and mix. Slowly pour the gelatin mixture evenly over the cake, allowing it to soak into the poked holes.
  4. Spread Raspberry Preserves: Microwave the raspberry preserves for 20–30 seconds until pourable. Spread them evenly over the surface of the cake. Let the cake cool completely before refrigerating.
  5. Chill the Cake: Refrigerate the cake for at least 2 hours to allow the gelatin to set and flavors to meld.
  6. Add Whipped Topping and Garnish: Once chilled, spread the whipped topping evenly over the cake. Garnish with fresh raspberries and white chocolate shavings if desired.
  7. Serve: Slice the cake and serve cold for the best flavor and texture.

Notes

  • This cake is perfect for holidays or Valentine’s Day.
  • For a richer topping, substitute whipped topping with sweetened cream cheese or mascarpone whipped cream.
