Description

Low Country Boil is a classic Southern dish featuring a hearty mix of shrimp, sausage, corn, and potatoes, all boiled together with flavorful seasonings for a communal, hands-on meal.


Ingredients

  • 1 lb large shrimp, shell-on
  • 1 lb smoked sausage, sliced into 1-inch pieces
  • 4 ears corn, cut into halves or thirds
  • 1.5 lbs baby red potatoes
  • 1 lemon, quartered
  • 4 cloves garlic, smashed
  • 1/4 cup Old Bay seasoning
  • 2 tbsp salt
  • Water, as needed
  • Optional: hot sauce, for serving
  • Optional: melted butter, for serving

Instructions

  1. Fill a large stockpot with water and add Old Bay seasoning, salt, lemon quarters, and garlic. Bring to a boil.
  2. Add the potatoes and cook for 10-12 minutes until slightly tender.
  3. Add the sausage and cook for 5 minutes.
  4. Add the corn and cook for 5 more minutes.
  5. Add the shrimp and cook for 2-3 minutes, or until pink and cooked through.
  6. Drain the boil and spread it out on a newspaper-covered table or a large serving tray.
  7. Serve immediately with melted butter and hot sauce if desired.

Notes

  • You can customize with crab legs or clams for a seafood feast.
  • For extra spice, add cayenne pepper or a few dashes of hot sauce to the boil water.
  • Shell-on shrimp retain more flavor during cooking.
