- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups green cabbage, chopped
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 1 bell pepper, chopped
- 6 cups low-sodium vegetable broth
- 1 (14.5 oz) can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon thyme
- Salt and pepper to taste
- 1 tablespoon lemon juice (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, and sauté until fragrant, about 3-4 minutes.
- Add chopped cabbage, carrots, celery, and bell pepper. Cook for 5-6 minutes, stirring occasionally.
- Pour in the vegetable broth and diced tomatoes.
- Stir in oregano, basil, thyme, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 25-30 minutes, until vegetables are tender.
- Add lemon juice if desired and adjust seasonings to taste.
- Serve hot and enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- This soup freezes well for up to 3 months.
- You can add cooked chicken or turkey for extra protein.
- For a spicier version, add red pepper flakes or chopped jalapeños.
