Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 bell pepper, chopped
  • 6 cups low-sodium vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, and sauté until fragrant, about 3-4 minutes.
  3. Add chopped cabbage, carrots, celery, and bell pepper. Cook for 5-6 minutes, stirring occasionally.
  4. Pour in the vegetable broth and diced tomatoes.
  5. Stir in oregano, basil, thyme, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat and simmer for 25-30 minutes, until vegetables are tender.
  7. Add lemon juice if desired and adjust seasonings to taste.
  8. Serve hot and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • This soup freezes well for up to 3 months.
  • You can add cooked chicken or turkey for extra protein.
