Description
These Loaded Smothered Beef Burritos are filled with seasoned ground beef, beans, and cheese, then smothered in red enchilada sauce and more cheese before being baked to perfection.

- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 can (16 oz) refried beans
- 1 cup cooked rice (optional)
- 1 can (10 oz) red enchilada sauce
- 1 1/2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/2 cup chopped onions (optional)
- 1/2 cup chopped tomatoes (optional)
- 1/4 cup chopped fresh cilantro (optional)
- Sour cream, for topping (optional)
- Green onions, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Stir and simmer for 5 minutes.
- Warm the refried beans in a small saucepan or microwave.
- Lay out the tortillas and spread a layer of refried beans in the center of each.
- Add a layer of beef, rice (if using), onions, tomatoes, and a sprinkle of cheese.
- Roll the burritos tightly and place them seam-side down in a greased baking dish.
- Pour enchilada sauce evenly over the burritos and top with remaining cheese.
- Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
- Garnish with green onions, cilantro, and sour cream if desired. Serve hot.
Notes
- You can substitute ground beef with shredded chicken or turkey for a lighter version.
- To make it spicier, add chopped jalapeños or use spicy enchilada sauce.
- These burritos can be made ahead and frozen before baking.
