Description

Loaded Chicken Casserole is a hearty, comforting dish filled with tender chicken, crispy bacon, cheese, and potatoes, making it a perfect family dinner option.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 6 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 6 slices bacon, cooked and crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 green onions, sliced (optional for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread potatoes in a greased 9×13-inch baking dish and bake for 25 minutes, stirring halfway through.
  4. While potatoes are baking, cook and crumble the bacon. Set aside.
  5. In the same bowl, mix chicken pieces with sour cream, mayonnaise, milk, and half of the cheese.
  6. Remove the potatoes from the oven and top with the chicken mixture. Stir to combine evenly.
  7. Top with remaining cheese and crumbled bacon.
  8. Bake uncovered for another 20–25 minutes, or until the chicken is cooked through and the top is golden and bubbly.
  9. Garnish with sliced green onions if desired and serve hot.

Notes

  • Use rotisserie chicken for a quicker version.
  • Add chopped vegetables like broccoli or bell peppers for added nutrition.
  • Can be made ahead and refrigerated before final baking.
