- 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 6 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup milk
- 6 slices bacon, cooked and crumbled
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 green onions, sliced (optional for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread potatoes in a greased 9×13-inch baking dish and bake for 25 minutes, stirring halfway through.
- While potatoes are baking, cook and crumble the bacon. Set aside.
- In the same bowl, mix chicken pieces with sour cream, mayonnaise, milk, and half of the cheese.
- Remove the potatoes from the oven and top with the chicken mixture. Stir to combine evenly.
- Top with remaining cheese and crumbled bacon.
- Bake uncovered for another 20–25 minutes, or until the chicken is cooked through and the top is golden and bubbly.
- Garnish with sliced green onions if desired and serve hot.
Notes
- Use rotisserie chicken for a quicker version.
- Add chopped vegetables like broccoli or bell peppers for added nutrition.
- Can be made ahead and refrigerated before final baking.
