Description
Linzer Cookies are delicate, buttery sandwich cookies filled with fruit preserves and dusted with powdered sugar. Originating from Austria, they’re a festive treat often enjoyed during the holidays.

- 1 cup (2 sticks) unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large egg yolks
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 2 cups all-purpose flour
- 3/4 cup finely ground almonds (or almond flour)
- 1/4 tsp salt
- 1/2 cup raspberry or strawberry jam
- Powdered sugar, for dusting
Instructions
- In a large bowl, cream the butter and sugar until light and fluffy.
- Mix in the egg yolks, vanilla extract, and almond extract.
- In a separate bowl, whisk together the flour, ground almonds, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Divide the dough in half, shape into disks, wrap in plastic wrap, and chill for at least 1 hour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll out one disk of dough on a lightly floured surface to about 1/8 inch thickness.
- Cut out cookies with a round cutter and use a smaller cutter to cut a window in half of the cookies.
- Place cookies on prepared baking sheets and bake for 10-12 minutes, or until edges are lightly golden.
- Cool cookies on wire racks. Spread jam on the solid cookie bottoms and top with windowed cookies.
- Dust the tops with powdered sugar before assembling or after if desired.
Notes
- You can use any flavor of jam you prefer.
- Store in an airtight container at room temperature for up to a week.
- Let cookies fully cool before assembling to prevent jam from becoming runny.
