For the Lemongrass Chicken:

  • 2 lemongrass stalks, minced
  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil

For the Rice:

  • 1 cup jasmine rice
  • 2 cups water
  • Salt to taste

For the Zucchini:

  • 2 zucchinis, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine lemongrass, garlic, soy sauce, fish sauce, honey, and oil. Add chicken breasts and marinate for at least 30 minutes.
  2. Cook the Rice: Rinse rice until water runs clear. In a pot, bring water to a boil, add rice and salt. Cover, reduce heat, and simmer for 15-20 minutes.
  3. Grill the Chicken: Preheat grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side or until cooked through.
  4. Sauté the Zucchini: Heat olive oil in a pan, add zucchini slices, season with salt and pepper, and sauté until tender.
