Description

These Lemon Truffles are a bright, creamy, no-bake treat bursting with zesty lemon flavor. Perfect for summer gatherings or a light dessert, they combine white chocolate and cream cheese for a melt-in-your-mouth texture.

  • 1 cup white chocolate chips
  • 4 oz cream cheese, softened
  • 1/2 tsp lemon extract
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 cup powdered sugar (plus more for coating)
  • Pinch of salt

Instructions

  1. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. In a medium bowl, beat the softened cream cheese until smooth.
  3. Add the lemon extract, lemon juice, lemon zest, and pinch of salt to the cream cheese. Mix until combined.
  4. Pour in the melted white chocolate and beat until smooth and well incorporated.
  5. Add the powdered sugar and mix until a soft dough forms. Chill the mixture for 1 hour.
  6. Once chilled, scoop and roll into 1-inch balls using your hands or a small cookie scoop.
  7. Roll each truffle in additional powdered sugar for coating.
  8. Refrigerate for 30 minutes to set before serving.
