Description

Soft and fluffy lemon sweet rolls filled with zesty lemon sugar and topped with a tangy lemon glaze. A refreshing twist on the classic cinnamon roll, perfect for breakfast or brunch.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 3/4 cup warm milk (about 110°F)
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 tbsp lemon zest
  • 1/2 cup granulated sugar (for filling)
  • 2 tbsp lemon zest (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp fresh lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)

Instructions

  1. In a large mixing bowl, combine warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5-10 minutes until foamy.
  2. Add melted butter, eggs, remaining sugar, salt, and lemon zest. Mix well.
  3. Gradually add flour and mix until a soft dough forms. Knead for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours or until doubled in size.
  5. In a small bowl, mix the sugar and lemon zest for the filling.
  6. Roll out the dough on a floured surface into a 12×18 inch rectangle. Spread softened butter over the dough, then sprinkle the lemon sugar evenly.
  7. Roll the dough tightly into a log and cut into 12 equal rolls. Place in a greased 9×13 inch baking dish.
  8. Cover and let rise for another 30-45 minutes until puffy.
  9. Preheat oven to 350°F (175°C). Bake the rolls for 20-25 minutes or until golden brown.
  10. While the rolls are baking, mix the powdered sugar, lemon juice, and zest to make the glaze.
  11. Drizzle the lemon glaze over the warm rolls before serving.

Notes

  • You can prepare the rolls the night before and bake them in the morning.
  • Add a bit of cream cheese to the glaze for a richer flavor.
  • Use Meyer lemons for a slightly sweeter taste.
