- 1 prepared pizza dough
- 2 tbsp olive oil
- 1 garlic clove, minced
- 1 lemon, thinly sliced and seeds removed
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp chopped fresh basil
- Salt and pepper to taste
Instructions
- Preheat the oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
- Roll out the pizza dough on a floured surface to your desired thickness.
- In a small bowl, mix olive oil and minced garlic. Brush the mixture over the rolled-out dough.
- Spread ricotta cheese evenly over the dough, then layer with mozzarella and Parmesan cheeses.
- Arrange the thin lemon slices evenly over the cheese layer.
- Sprinkle with red pepper flakes, salt, and pepper.
- Transfer the pizza onto the hot stone or baking sheet and bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from the oven and sprinkle with fresh basil before serving.

- Use Meyer lemons for a sweeter, less tart flavor.
- A mandoline helps achieve evenly thin lemon slices.
- Add arugula on top after baking for a peppery bite.
