- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1/2 cup chopped pecans (optional)
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) container whipped topping, thawed (divided)
- 2 (3.4 oz) packages instant lemon pudding mix
- 3 cups cold milk
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour, melted butter, and chopped pecans until combined.
- Press the mixture into the bottom of a 9×13-inch baking dish. Bake for 15-20 minutes, or until lightly golden. Let cool completely.
- In another bowl, beat the cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping. Spread over the cooled crust.
- In a separate bowl, whisk together the lemon pudding mixes and cold milk until thickened, about 2 minutes. Spread over the cream cheese layer.
- Top with the remaining whipped topping. Chill in the refrigerator for at least 2 hours before serving.
