Description

Leftover Mashed Potato Cheese Puffs are crispy, cheesy bites made from leftover mashed potatoes, perfect as a snack or appetizer.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 2 tablespoons chopped chives (optional)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a mini muffin tin with cooking spray or oil.
  2. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, chives, salt, and pepper. Mix well until fully incorporated.
  3. Spoon the mixture into the greased mini muffin tin, filling each cup to the top and pressing slightly to compact.
  4. Bake for 20-25 minutes or until the tops are golden brown and crispy.
  5. Allow to cool slightly before removing from the tin. Serve warm.

Notes

  • These puffs can be made ahead and reheated in the oven.
  • Add cooked bacon bits or green onions for extra flavor.
  • Use a non-stick muffin tin to avoid sticking.
