Description

Korean Twisted Donuts, or Kkwabaegi, are soft and fluffy fried dough pastries coated in cinnamon sugar. These delightful treats offer a perfect balance of sweetness and a light, airy texture with a subtle yeast flavor. Traditionally enjoyed as a street food snack in Korea, they make for a delicious homemade dessert or afternoon snack.

Ingredients

Scale

Dough Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp active dry yeast
  • 1 cup warm milk (110°F)
  • 2 large eggs
  • 1/2 tsp salt

For Frying and Coating

  • 2 cups oil (for frying)
  • 1/4 cup cinnamon sugar mixture (1/4 cup sugar + 1 tsp ground cinnamon)

Instructions

  1. Activate Yeast: Combine warm milk and active dry yeast in a bowl; let it sit for 5-10 minutes until frothy, indicating the yeast is active and ready.
  2. Mix Dry Ingredients and Form Dough: In a large mixing bowl, whisk together the flour, sugar, and salt. Create a well in the center, then add the yeast mixture and beaten eggs. Stir to combine into a dough.
  3. Knead Dough and First Rise: Knead the dough on a floured surface for 6-8 minutes until it’s smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.
  4. Shape the Donuts: Punch down the risen dough to release air. Roll it out into rectangles about ½ inch thick. Cut the dough into strips, then twist each strip into a spiral shape to form the characteristic twisted donut shape.
  5. Fry the Donuts: Heat oil in a deep pot to 350°F (175°C). Fry each twisted donut for about 3-4 minutes until they turn golden brown, turning as needed to cook evenly.
  6. Coat Donuts: Remove the fried donuts and drain excess oil on paper towels. While still warm, coat the donuts evenly with the cinnamon sugar mixture for a sweet and aromatic finish.

Notes

  • Ensure the milk is warm, not hot, to properly activate the yeast without killing it.
  • Kneading is essential for developing gluten, which gives the donuts their chewy texture.
  • Use a candy or deep-fry thermometer to maintain oil temperature for even frying.
  • Donuts are best enjoyed fresh for optimal texture and flavor.
  • You can store leftover donuts in an airtight container for up to 2 days but reheat slightly for best taste.
