- 1 tbsp olive oil
- 14 oz kielbasa sausage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 3 carrots, sliced
- 4 cups chicken broth
- 1 cup milk or half-and-half
- 1/2 cup sour cream
- Salt and pepper to taste
- 1 tsp dried thyme (optional)
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned, about 4–5 minutes. Remove and set aside.
- In the same pot, add onion and garlic and sauté until fragrant and soft, about 3 minutes.
- Add potatoes, carrots, chicken broth, thyme (if using), salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until vegetables are tender.
- Stir in milk and sour cream. Return kielbasa to the pot and cook for another 5 minutes to heat through.
- Adjust seasoning if needed. Garnish with chopped parsley and serve warm.
Notes
- Use smoked kielbasa for extra flavor.
- You can substitute heavy cream for milk for a richer soup.
- This soup pairs well with crusty bread for a complete meal.
