Scale
Main Ingredients
- 1 lb ground beef
- 1/2 small onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 cup chopped mushrooms (optional)
- 1/2 cup sour cream
- 1/4 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup beef broth
- 1 batch keto cauliflower “tater tots” (homemade or store-bought)
- 1/2 cup shredded mozzarella cheese
- Chopped parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook Ground Beef Mixture: In a skillet over medium heat, combine the ground beef, chopped onion, minced garlic, salt, black pepper, smoked paprika, and mushrooms if using. Cook until the beef is browned and cooked through, stirring occasionally. Drain any excess fat.
- Make the Creamy Sauce: Stir in the sour cream, softened cream cheese, shredded cheddar cheese, and beef broth to the cooked beef mixture. Mix well until the sauce is creamy and smooth.
- Assemble the Casserole: Grease an 8×8-inch baking dish and spread the beef mixture evenly across the bottom.
- Add Tater Tots and Cheese: Top the beef mixture with a single layer of keto cauliflower tater tots. Sprinkle shredded mozzarella cheese evenly over the top.
- Bake the Casserole: Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the casserole is hot, bubbly, and the tots are golden brown.
- Garnish and Serve: Let the casserole cool slightly, garnish with chopped parsley if desired, and serve warm.
Notes
- You can make your own keto “tater tots” by combining riced cauliflower, egg, cheese, and almond flour, shaping them into small rounds, then baking or air-frying before adding to the casserole.
- Using mushrooms is optional, but they add a nice earthy flavor and extra nutrition.
- For a dairy-free version, substitute cream cheese and sour cream with coconut-based alternatives.
- Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven for best texture.
