- 1/2 cup unsalted butter, melted
- 1/2 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/3 cup erythritol or preferred keto sweetener
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a mini muffin tin with liners or grease well.
- In a bowl, mix melted butter and erythritol until combined.
- Add eggs and vanilla extract, whisk until smooth.
- In another bowl, combine almond flour, cocoa powder, salt, and baking powder.
- Add dry ingredients to wet ingredients and mix until well incorporated.
- Fold in chocolate chips if using.
- Spoon batter evenly into prepared mini muffin tin.
- Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
