Description

These Keto Brownie Bites are rich, fudgy, and low-carb, making them a perfect guilt-free treat for chocolate lovers following a keto or low-carb lifestyle.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup erythritol or preferred keto sweetener
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a mini muffin tin with liners or grease well.
  2. In a bowl, mix melted butter and erythritol until combined.
  3. Add eggs and vanilla extract, whisk until smooth.
  4. In another bowl, combine almond flour, cocoa powder, salt, and baking powder.
  5. Add dry ingredients to wet ingredients and mix until well incorporated.
  6. Fold in chocolate chips if using.
  7. Spoon batter evenly into prepared mini muffin tin.
  8. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
