- 1 1/2 lbs boneless, skinless chicken thighs
- 2 tbsp jerk seasoning
- 1 tbsp olive oil
- 8 small corn or flour tortillas
- 1 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 1/4 cup mayonnaise
- 1 tbsp lime juice
- 1 tsp honey
- Salt and pepper to taste
- Optional toppings: diced mango, avocado slices, chopped green onions
Instructions
- In a bowl, combine the chicken thighs with jerk seasoning and olive oil. Marinate for at least 30 minutes.
- Grill or pan-sear the chicken over medium-high heat for 5–6 minutes per side, or until fully cooked. Let rest, then slice into strips.
- In another bowl, mix mayonnaise, lime juice, honey, salt, and pepper to make the slaw dressing.
- Toss shredded cabbage, carrots, and cilantro with the dressing to create the slaw.
- Warm the tortillas in a dry skillet or microwave.
- Assemble the tacos by adding jerk chicken, slaw, and optional toppings to each tortilla.
- Serve immediately with lime wedges on the side.
Notes
- For extra heat, add a dash of hot sauce or sliced jalapeños.
- Use pre-made jerk marinade if preferred for convenience.
- These tacos pair well with a side of black beans or plantain chips.
