Description

A fresh, crunchy, and protein-packed salad made famous by Jennifer Aniston, featuring quinoa, chickpeas, cucumbers, herbs, and a lemony dressing.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup canned chickpeas, rinsed and drained
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped fresh parsley
  • 1/3 cup chopped red onion
  • 1/3 cup chopped fresh mint
  • 1/4 cup chopped pistachios
  • 1/2 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions. Let it cool completely.
  2. In a large bowl, combine the quinoa, chickpeas, cucumber, parsley, red onion, mint, and pistachios.
  3. Add the crumbled feta cheese to the bowl.
  4. Drizzle with olive oil and lemon juice. Toss everything together to combine.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Can be stored in the fridge for up to 3 days.
  • Great as a meal prep option or a side dish.
  • Leave out the feta for a vegan version.
