A fresh, crunchy, and protein-packed salad made famous by Jennifer Aniston, featuring quinoa, chickpeas, cucumbers, herbs, and a lemony dressing.

- 1 cup cooked quinoa
- 1 cup canned chickpeas, rinsed and drained
- 1/2 cup chopped cucumber
- 1/2 cup chopped fresh parsley
- 1/3 cup chopped red onion
- 1/3 cup chopped fresh mint
- 1/4 cup chopped pistachios
- 1/2 cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Cook the quinoa according to package instructions. Let it cool completely.
- In a large bowl, combine the quinoa, chickpeas, cucumber, parsley, red onion, mint, and pistachios.
- Add the crumbled feta cheese to the bowl.
- Drizzle with olive oil and lemon juice. Toss everything together to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Can be stored in the fridge for up to 3 days.
- Great as a meal prep option or a side dish.
- Leave out the feta for a vegan version.
