Description

This hearty Italian sausage stew is packed with flavor and comfort. Made with savory sausage, creamy white beans, and tender vegetables, it’s the perfect one-pot meal for a chilly day. Simple ingredients, bold taste, and ready in under an hour—this stew is a weeknight favorite!


Ingredients

  • 1 tablespoon olive oil

  • 1 pound Italian sausage (mild or spicy), casings removed

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 2 medium carrots, sliced

  • 2 celery stalks, chopped

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1/2 teaspoon crushed red pepper flakes (optional)

  • 1 (15-ounce) can diced tomatoes

  • 3 cups low-sodium chicken broth

  • 2 (15-ounce) cans white beans, drained and rinsed

  • Salt and pepper to taste

  • 2 cups fresh spinach (or kale), roughly chopped

  • Grated Parmesan cheese, for serving (optional)


Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add the sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

  • Add the onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.

  • Stir in the oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.

  • Pour in the diced tomatoes and chicken broth. Bring to a boil.

  • Reduce heat to low and stir in the white beans. Simmer uncovered for 20 minutes.

  • Add chopped spinach and cook for another 5 minutes until wilted.

  • Season with salt and pepper to taste.

 

  • Serve hot, topped with grated Parmesan if desired.


Notes

  • For extra depth of flavor, deglaze the pan with a splash of white wine before adding the tomatoes.

  • Swap spinach for kale or Swiss chard if preferred.
