1 pound Italian sausage (mild or spicy), casings removed

1 small yellow onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon crushed red pepper flakes (optional)

1 (15-ounce) can diced tomatoes

3 cups low-sodium chicken broth

2 (15-ounce) cans white beans, drained and rinsed

Salt and pepper to taste

2 cups fresh spinach (or kale), roughly chopped

Grated Parmesan cheese, for serving (optional)
Instructions

Heat olive oil in a large pot over medium heat.

Add the sausage and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add the onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.

Stir in the oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.

Pour in the diced tomatoes and chicken broth. Bring to a boil.

Reduce heat to low and stir in the white beans. Simmer uncovered for 20 minutes.
