  • 1 lb Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional, for sautéing)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up as it cooks.
  2. Add chopped onion and garlic to the pot and sauté until fragrant, about 2-3 minutes.
  3. Stir in cabbage, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  4. Add chicken broth, diced tomatoes, oregano, and basil. Stir well to combine.
  5. Bring the soup to a boil, then reduce heat and simmer uncovered for 25-30 minutes, or until vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread or on its own.
