- 1 lb Italian sausage, casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chopped green cabbage
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- 1 tbsp olive oil (optional, for sautéing)
Instructions
- In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up as it cooks.
- Add chopped onion and garlic to the pot and sauté until fragrant, about 2-3 minutes.
- Stir in cabbage, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
- Add chicken broth, diced tomatoes, oregano, and basil. Stir well to combine.
- Bring the soup to a boil, then reduce heat and simmer uncovered for 25-30 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot with crusty bread or on its own.
