Instructions
- Prepare the Chips: Heat vegetable oil in a large skillet over medium-high heat. Separate wonton wrappers and cut each in half to form triangles. Carefully deep-fry 4 triangles at a time in the hot oil for 30 to 40 seconds until light golden. Remove chips quickly and drain on paper towels. Repeat until all chips are fried.
- Cook the Bell Peppers: In a small skillet, heat 1 teaspoon olive oil over medium-high heat. Add diced red bell peppers and sauté for 5 minutes or until tender and fragrant.
- Assemble the Nachos: Spread the fried wonton chips evenly in a single layer on a large baking sheet lined with parchment paper or foil. Drizzle evenly with Alfredo sauce. Top with shredded chicken, 1 cup of shredded mozzarella cheese, sautéed bell peppers, and sliced black olives. Finally, sprinkle the remaining 1 cup of mozzarella over everything.
- Broil for Melting: Place the baking sheet under the broiler preheated to 450°F. Broil for 2 to 3 minutes until the cheese melts and bubbles. Watch closely to avoid burning.
