- 1 lb ground beef
- 1 cup uncooked long grain rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and garlic, and sauté until softened.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in uncooked rice, black beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper.
- Pour in the beef broth and stir to combine.
- Transfer the mixture to a greased 9×13 inch baking dish and cover with foil.
- Bake for 45 minutes or until the rice is tender and liquid is absorbed.
- Remove the foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 5-10 minutes until the cheese is melted and bubbly.
- Let sit for 5 minutes before serving.
Notes
- Use ground turkey or chicken as a lighter alternative to beef.
- Add jalapeños for extra heat.
- Top with fresh cilantro or green onions for added flavor.
