Description

Cowboy Rice Casserole is a hearty and flavorful dish made with ground beef, rice, beans, and vegetables, all baked together with cheese for a comforting meal perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 cup uncooked long grain rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, and garlic, and sauté until softened.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in uncooked rice, black beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper.
  5. Pour in the beef broth and stir to combine.
  6. Transfer the mixture to a greased 9×13 inch baking dish and cover with foil.
  7. Bake for 45 minutes or until the rice is tender and liquid is absorbed.
  8. Remove the foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 5-10 minutes until the cheese is melted and bubbly.
  9. Let sit for 5 minutes before serving.

Notes

  • Use ground turkey or chicken as a lighter alternative to beef.
  • Add jalapeños for extra heat.
  • Top with fresh cilantro or green onions for added flavor.
