Ingredients
Scale
Fruit Mixture
- 5 medium Peaches, unpeeled and thinly sliced
- 1/2 cup Light Brown Sugar, packed
- 2 Tbsp. Cornstarch
- 2 tsp. Fresh Lemon Juice
- 1/2 tsp. Ground Cinnamon
- 1/4 tsp. Ground Cardamom
- 1/4 tsp. Kosher Salt
Piecrust and Toppings
- 1 package Refrigerated Piecrusts (14.1-oz. package)
- All-Purpose Flour, for work surface
- 1 large Egg
- 1 Tbsp. Water
- 2 tsp. Granulated Sugar
Instructions
- Preparation Steps: Preheat your oven as directed on the refrigerated piecrust package to ensure the crust bakes evenly and crisply.
- Mix the Peach Filling: In a large bowl, gently toss the thinly sliced peaches with light brown sugar, cornstarch, fresh lemon juice, ground cinnamon, ground cardamom, and kosher salt until all ingredients are well combined and coated.
- Prepare Piecrusts: Lightly flour your work surface and roll out the refrigerated piecrusts until about 1/8 inch thick to make sure the crusts are thin enough to bake properly without being doughy.
- Assemble the Pies: Place the bottom piecrusts into individual pie dishes and evenly spoon the peach filling over the crust inside each dish.
- Seal and Vent: Cover each filled pie with a top crust, sealing the edges by gently pinching or pressing with a fork. Cut several small slits in the top crust to allow steam to escape during baking.
- Apply Egg Wash: In a small bowl, beat the egg with water then brush this wash over the top crusts to achieve a golden, glossy finish and sprinkle granulated sugar evenly over them for a sweet crunch.
- Bake the Pies: Following the piecrust package baking instructions, bake the pies until the crust is golden brown and the filling is bubbling, which usually takes around 35 to 40 minutes.
Notes
- Use ripe but firm peaches to retain shape during baking.
- Chilling the pies before baking can help maintain crust flakiness.
- Adjust sugar amount based on peach sweetness or personal preference.
- Let pies cool slightly before serving to allow filling to set.
