Ingredients
Scale
Cookies
- 24 chocolate chip cookies (store-bought or homemade)
Ice Cream
- 2 pints vanilla ice cream, softened
Optional Decorations
- 1/2 cup mini chocolate chips (optional)
- 1/2 cup sprinkles (optional)
- 2 tablespoons melted chocolate for drizzling (optional)
Instructions
- Soften Ice Cream: Allow the vanilla ice cream to soften at room temperature for 5 to 10 minutes until it is easily scoopable, making it easier to spread between the cookies.
- Assemble Sandwiches: Place one chocolate chip cookie flat side up on a clean surface. Scoop about 1/4 cup of the softened ice cream onto the cookie and spread it evenly across the surface.
- Add Second Cookie: Top the ice cream-covered cookie with another cookie, flat side down, pressing gently to form a sandwich without squeezing the ice cream out.
- Decorate Edges: If desired, roll the edges of the ice cream sandwich in mini chocolate chips or sprinkles to add texture and color.
- Freeze to Firm Up: Place the assembled sandwiches on a baking sheet lined with parchment paper and freeze for at least 1 hour to ensure they firm up and hold their shape.
- Optional Chocolate Drizzle: Before serving, drizzle melted chocolate over the sandwiches for an extra touch of indulgence.
Notes
- You can substitute any ice cream flavor or cookie type such as sugar cookies, peanut butter, or oatmeal to personalize these sandwiches.
- For softer sandwiches, slightly warm the cookies before assembling.
- Store the sandwiches in an airtight container in the freezer for up to 1 week to maintain freshness.
