Description
Huli Huli Chicken is a Hawaiian-style grilled chicken marinated in a sweet and tangy sauce made with pineapple juice, soy sauce, brown sugar, and ginger, then grilled to smoky perfection.

- 1 whole chicken (about 3–4 lbs), cut into halves or quarters
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 tbsp rice vinegar
- 2 tbsp fresh ginger, grated
- 2 garlic cloves, minced
- 1 tbsp sesame oil
- 1/2 tsp black pepper
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, ginger, garlic, sesame oil, and black pepper to make the marinade.
- Place the chicken in a large resealable bag or container and pour the marinade over it. Seal and refrigerate for at least 4 hours, preferably overnight.
- Preheat grill to medium-high heat. Remove chicken from marinade and reserve the marinade.
- Grill chicken skin-side down first for about 6-8 minutes, then flip and continue grilling for another 20-25 minutes, basting occasionally with the reserved marinade.
- Grill until chicken is fully cooked and nicely charred, reaching an internal temperature of 165°F (74°C).
- Remove from grill and let rest for a few minutes before serving.
Notes
- For best results, marinate the chicken overnight.
- Use bone-in, skin-on chicken for maximum flavor and moisture.
- Leftover marinade should be boiled before basting to ensure food safety.
- Serve with steamed rice and grilled pineapple for a tropical touch.
