Description
Huli Huli Chicken is a popular Hawaiian dish made with marinated grilled chicken that’s juicy, flavorful, and slightly sweet with a hint of smokiness.

- 1 whole chicken (about 3–4 lbs), cut into pieces
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/3 cup ketchup
- 1/3 cup pineapple juice
- 1/4 cup rice vinegar
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thickening sauce)
Instructions
- In a bowl, mix soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, ginger, garlic, sesame oil, Worcestershire sauce, and black pepper to create the marinade.
- Reserve 1 cup of the marinade for basting and optionally thicken it by heating with cornstarch until slightly thickened.
- Place the chicken pieces in a large zip-top bag or bowl and pour in the remaining marinade. Marinate for at least 4 hours or overnight in the refrigerator.
- Preheat grill to medium heat. Oil the grates lightly to prevent sticking.
- Grill chicken over indirect heat, turning occasionally and basting with reserved sauce, until cooked through and nicely charred, about 35-45 minutes.
- Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
- Serve hot with rice or grilled pineapple slices.
Notes
- For extra flavor, marinate the chicken overnight.
- Chicken thighs or drumsticks work especially well for grilling.
- The reserved marinade should never be reused unless boiled first for safety.
