- 6 cups peeled and sliced apples (Granny Smith or Honeycrisp)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup cornstarch
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons lemon juice
- 1 cup water
- 1 teaspoon vanilla extract
Instructions
- Peel, core, and slice the apples evenly.
- In a large saucepan over medium heat, combine water, sugars, cornstarch, cinnamon, nutmeg, salt, and lemon juice. Stir until smooth.
- Bring the mixture to a boil, stirring constantly, until it thickens (about 2 minutes).
- Add the sliced apples and reduce the heat to low. Simmer for 10–15 minutes, or until apples are just tender.
- Remove from heat and stir in vanilla extract.
- Let the filling cool before using or store in an airtight container in the refrigerator.
Notes
- Use a mix of tart and sweet apples for balanced flavor.
- The filling thickens more as it cools.
- Can be stored in the fridge for up to 5 days or frozen for 3 months.
