Ingredients
Scale
Sweet Potatoes
- 2 medium sweet potatoes
- 1 tablespoon olive oil (or avocado oil)
- 1 teaspoon homemade or store-bought taco seasoning
Beef
- 500 grams lean beef mince (ground beef)
- 1 tablespoon olive oil (or avocado oil)
- 2 teaspoons homemade or store-bought taco seasoning
- Splash of water
Toppings
- 2 cups dairy free cottage cheese
- 1 avocado, peeled and diced
- 1-2 tablespoons hot honey
Instructions
- Prepare Sweet Potatoes: Wash the sweet potatoes and peel them if desired. Cut into 2.5 cm (1-inch) cubes for even cooking.
- Season Sweet Potatoes: In a bowl, toss the sweet potato cubes with 1 tablespoon olive oil and 1 teaspoon taco seasoning to coat evenly.
- Air Fry Sweet Potatoes: Place seasoned sweet potatoes in a single layer in the air fryer basket. Cook at 200°C (400°F) for 20 minutes, shaking the basket occasionally to ensure even roasting.
- Cook Beef Mince: While the sweet potatoes cook, heat the remaining 1 tablespoon of olive oil in a large frying pan over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned.
- Season Beef: Stir in the remaining taco seasoning and a splash of water. Continue cooking until the beef is fully browned and any excess moisture has evaporated.
- Assemble Bowls: Divide cooked sweet potatoes evenly among four bowls or meal prep containers. Top each with the cooked beef mince.
- Add Toppings and Serve: If serving immediately, top each bowl with diced avocado, a scoop of dairy-free cottage cheese, and drizzle with hot honey to taste for a sweet and spicy finish.
Notes
- You can peel sweet potatoes if you prefer, but leaving the skin on adds fiber and nutrients.
- The taco seasoning can be homemade or store-bought depending on your preference.
- Hot honey adds a spicy-sweet flavor contrast, adjust the amount according to your heat tolerance.
- This recipe is great for meal prep; assemble all components and add fresh toppings just before eating.
- Substitute dairy-free cottage cheese with regular cottage cheese if not dairy-free.
