Description

A flavorful and balanced Hot Honey Sweet Potato Beef Bowl combining roasted sweet potatoes, seasoned lean ground beef, creamy dairy-free cottage cheese, fresh avocado, and a spicy-sweet drizzle of hot honey. Perfect for a nutritious and satisfying weeknight meal.

Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil (or avocado oil)
  • 1 teaspoon homemade or store-bought taco seasoning

Beef

  • 500 grams lean beef mince (ground beef)
  • 1 tablespoon olive oil (or avocado oil)
  • 2 teaspoons homemade or store-bought taco seasoning
  • Splash of water

Toppings

  • 2 cups dairy free cottage cheese
  • 1 avocado, peeled and diced
  • 1-2 tablespoons hot honey

Instructions

  1. Prepare Sweet Potatoes: Wash the sweet potatoes and peel them if desired. Cut into 2.5 cm (1-inch) cubes for even cooking.
  2. Season Sweet Potatoes: In a bowl, toss the sweet potato cubes with 1 tablespoon olive oil and 1 teaspoon taco seasoning to coat evenly.
  3. Air Fry Sweet Potatoes: Place seasoned sweet potatoes in a single layer in the air fryer basket. Cook at 200°C (400°F) for 20 minutes, shaking the basket occasionally to ensure even roasting.
  4. Cook Beef Mince: While the sweet potatoes cook, heat the remaining 1 tablespoon of olive oil in a large frying pan over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned.
  5. Season Beef: Stir in the remaining taco seasoning and a splash of water. Continue cooking until the beef is fully browned and any excess moisture has evaporated.
  6. Assemble Bowls: Divide cooked sweet potatoes evenly among four bowls or meal prep containers. Top each with the cooked beef mince.
  7. Add Toppings and Serve: If serving immediately, top each bowl with diced avocado, a scoop of dairy-free cottage cheese, and drizzle with hot honey to taste for a sweet and spicy finish.

Notes

  • You can peel sweet potatoes if you prefer, but leaving the skin on adds fiber and nutrients.
  • The taco seasoning can be homemade or store-bought depending on your preference.
  • Hot honey adds a spicy-sweet flavor contrast, adjust the amount according to your heat tolerance.
  • This recipe is great for meal prep; assemble all components and add fresh toppings just before eating.
  • Substitute dairy-free cottage cheese with regular cottage cheese if not dairy-free.
