- 1 cup diced watermelon
- 1/2 cup halved cherry tomatoes
- 1/2 cup diced mango
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese (optional)
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey (or agave for vegan)
- Salt and pepper to taste
- 1/4 teaspoon chili flakes (optional)
Instructions
- In a large bowl, combine cucumber, watermelon, cherry tomatoes, mango, and red onion.
- Add chopped mint and feta cheese, if using.
- In a small bowl, whisk together olive oil, lime juice, honey, salt, pepper, and chili flakes.
- Pour dressing over the salad and toss gently to combine.
