Description

This Hot Corn Dip Recipe is a creamy, cheesy, and mildly spiced appetizer perfect for game days or parties. It combines sautéed vegetables and corn with cream cheese and Colby Jack cheese, baked to bubbly perfection and garnished with fresh green onions for extra flavor and color.

Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium heat to prepare for sautéing the vegetables.
  2. Sauté vegetables: Add diced onion, red bell pepper, and jalapeño to the skillet. Cook for 3-4 minutes until they are softened and fragrant.
  3. Add corn: Stir in the drained corn and cook for an additional 2-3 minutes to heat through and blend flavors.
  4. Add creaminess: Reduce heat to low and add the softened cream cheese along with sour cream. Stir continuously until the mixture becomes creamy and smooth.
  5. Season and cheese: Mix in 1 1/2 cups of the shredded Colby Jack cheese, chili powder, garlic powder, paprika, salt, and pepper. Stir until the cheese is fully melted and the dip is well combined.
  6. Prepare for baking: Transfer the dip mixture into a baking dish and sprinkle the remaining 1/2 cup of shredded Colby Jack cheese evenly on top.
  7. Bake: Place the dish in a preheated oven at 375°F (190°C) and bake for 15-20 minutes until the cheese is bubbly and golden brown.
