Description

A refreshing and crisp salad featuring sweet Honeycrisp apples, salty feta cheese, and a tangy vinaigrette. Perfect as a light lunch or a side dish.

Ingredients

Units Scale
  • 2 Honeycrisp apples, thinly sliced
  • 5 oz mixed greens (such as arugula, spinach, and romaine)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup dried cranberries
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
  2. In a large salad bowl, combine mixed greens, sliced apples, red onion, nuts, and dried cranberries.
  3. Drizzle the vinaigrette over the salad and toss gently to combine.
  4. Top with crumbled feta cheese and serve immediately.

Notes

  • To prevent apples from browning, toss slices in a bit of lemon juice before adding to the salad.
  • Use candied nuts for a sweeter crunch.
  • Goat cheese can be used as an alternative to feta.
