- 2 Honeycrisp apples, thinly sliced
- 5 oz mixed greens (such as arugula, spinach, and romaine)
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup dried cranberries
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
- In a large salad bowl, combine mixed greens, sliced apples, red onion, nuts, and dried cranberries.
- Drizzle the vinaigrette over the salad and toss gently to combine.
- Top with crumbled feta cheese and serve immediately.
Notes
- To prevent apples from browning, toss slices in a bit of lemon juice before adding to the salad.
