Description

Honey Roasted Colorful Carrots are a vibrant and delicious side dish featuring rainbow carrots glazed with a mixture of honey and olive oil, then roasted to perfection.


Ingredients

  • 1.5 lbs colorful carrots, peeled and trimmed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or rosemary (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or foil.
  3. In a large bowl, combine olive oil, honey, salt, pepper, and thyme or rosemary if using.
  4. Add the carrots to the bowl and toss until evenly coated.
  5. Spread the carrots in a single layer on the prepared baking sheet.
