- 1.5 lbs colorful carrots, peeled and trimmed
- 2 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme or rosemary (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or foil.
- In a large bowl, combine olive oil, honey, salt, pepper, and thyme or rosemary if using.
- Add the carrots to the bowl and toss until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, turning once halfway through, until carrots are tender and caramelized.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- Use rainbow carrots for a colorful presentation.
- Add a squeeze of lemon juice before serving for extra brightness.
- You can substitute maple syrup for honey to make it vegan.
